Beetroot Paratha

Beetroot paratha is healthy recipe specially if you have picky toddler.
 I made this for my little boy who hates beetroot but eat good when I make paratha. 
 I use mild spices for this and rolled thin paratha so it can cook nicely and remain soft for LO.

 It can be served as is or with any chutney or curd. And the most important part is the dough doesn’t need resting time.

Ingredients

  1.  1/2 cup grated beetroot (use small grater)
  2. 2 cup whole wheat flour
  3. 1 tablespoon chopped mint leaves
  4. 1 tablespoon chopped coriander leaves
  5. 1/2 tablespoon finely chopped curry leaves
  6. turmeric as desired (optional)
  7. 1 teaspoon Kashmiri red chilli powder
  8. 1 tablespoon sesame seeds (optional)
  9. Salt as per taste
  10. Oil/ ghee as needed
  11. wheat flour for rolling paratha

 How to make the recipe

  1. Wash beetroot under running water. Peel the outer skin and place it aside.
  2. Grate beetroot finely in a bowl
  3. To same bowl, add all the ingredients except oil/ ghee. Begin to knead , use water as needed.
  4. Knead it to a smooth pliable dough.
  5. Make 5 equal sized balls.
  6. If the dough turns sticky, add little flour and knead it.
  7. Sprinkle flour over the ball and begin to roll small roti.
  8. Apply oil all over and fold it to triangle.
  9. Sprinkle flour and start rolling to make a even paratha.
  10. I made extra thin for my toddler. You can make however you like.
  11. Sprinkle flour as needed.
  12. Heat a tawa on a moderately high flame.
  13. Place a paratha over the hot tawa.
  14. When you see small bubbles, flip it to the other side and toast it till lightly brown spots appear.
  15. Apply oil all over the Paratha while it is on tava, flip and do same to other side.
  16. Serve hot paratha with curd.
