Lauki Methi Sabzi
Just like you’d make any Sabzi with onion and tomato as a base I made this Sabzi using same Sabzi base and added meethi, lauki and pressure cooked without adding water on medium heat until 2 whistles..
Heat oil in pressure cooker, add cumin seeds wait for it to crackle now add onion and ginger garlic paste sauté till onions are translucent. Now add tomatoes and spices of your choice. I added red chilli powder, turmeric powder, little garam masala and Sabzi masala and salt
Mix everything well and let the tomatoes soften up now add methi leaves and stir in nicely, don’t over stir.. cover and cook for 2-3 mins without adding water
The trick is.. cooking the methi in oil then add lauki and put on the lid and pressure cook until two whistles on medium heat!
Tada super flavourful lauki methi is ready!
