Zunka

                                           Maharashtrian Zunka

Zunka Ki Pitla?
Both are my favourite and both taste very different. Although the cooking process is very much alike.
Zunka is a spicy dry version whereas Pitla has a runny consistency, little less spicy, yet super flavourful!
Today I am sharing a simple zunka recipe.

Ingredients
  1. 1 cup gram flour
  2. 1 teaspoon cumin seeds
  3. 1 teaspoon mustard seeds
  4.  5-6 curry leaves
  5. 4-5 cloves of garlic - finely chopped
  6.  A pinch of hing
  7. 1 big finely chopped onion
  8.  1/2 medium-size tomato shouldn't be soggy- firm tomato
  9. 1 tablespoon Kashmiri red chilli powder
  10.  1/4 teaspoon turmeric powder
  11.  2 tablespoon oil
  12.  Chopped coriander leaves
  13.  Salt as per taste
  14.  1 Cup Hot water
How to make the recipe
  1. In a pan, heat oil, splutter mustard and cumin seeds
  2.  Now ad curry leaves, hing and garlic, saute the garlic for a minute
  3.  Add finely chopped onions, saute till translucent
  4.  Add red chilli and turmeric powder, fry for 30sec, then add gram flour and mix well
  5.  Saute gram flour for 5-7 mins or until it turns aromatic
  6.  Further, add 1/4 cup hot water, chopped tomato, salt as per taste and mix well
  7. Keep sprinkling water in batches until the gram flour mixture turns moist
  8. I added almost 1 cup of hot water
  9.  Cover and cook for 9-10 min, on low flame, stirring in between so zunka doesn't stick to the bottom of pan
  10.  Switch of the flame
  11.  Garnish with chopped coriander leaves
  12.  Serve hot with roti
